Drink number 8!

I was attempting to make a fast and easy latte! I took my vanilla flavored syrup and poured it into my mug and poured regular drip coffee on top and added creamer. It was awful! Syrups really taste better with espresso! Yuck! Sadly I do not have pictures but I ended up poring it out. Not so great.
Oh well! Better luck next time! I have 44 more weeks to work on it!

Drink number 7! Well actually cake number 1!




I made this cappuccino mug cake and it was soooo yummy! So moist! So perfect. But it did not taste very much like coffee. So I had a cup of coffee too! :) It was so good especially for a mug cake! most mug cakes are to heavy and dense! This was awesome! Ohhh! Just talking about it makes me want to go make another one!

Coffee Drink number 6! And biscotti!

And this will be our finished product!
But first an update on the coffee-mate creamer coupon. I was not able to get a coupon for a free container of coffee-mate but I did get a $1.00 off coupon. My mom got one too so last night I went and bought two coffee-mate creamers. My total after buying the two was $1.56! Oh yea! 78 cents a piece! I got Caramel Macchiato and Cafe Latte! I used Cafe Latte this morning and it seems to taste just like the original. I will have to compare ingredients since I have not had the original in a while.
Okay. Now to todays coffee lesson. I had coffee with sugar and Cafe Latte creamer. I obviously have no recipe to give you for that. So I think I kind of cheated. But I have not had that drink yet this year and I do have something else coffee related for you! So maybe it is not too bad?
Right?
Anyway. I made biscotti's! And not just any but a Chocolate Chip Brownie Biscotti!
They turned out awesome! I am so thankful because I have never made Biscotti in my life and I did not really follow a recipe. I played off of many recipes. But they were good!

First cream 3 Tbs of softened butter with 1/3 cup of white sugar. (I used sucanat because I like the texture it gives better) 
Then add 1 egg and 1/2 a teaspoon of vanilla. Mix!
Add a little more than 3/4 cups of flour or about .88 of a cup. You don't have to be exact. I use whole wheat that was ground earlier in the week but white flour is just as good.  
^that is the flour I use. 
Mix in the flour. 
Add 3 Tbs. cocoa powder and 1 teaspoon of baking powder. 
Then stir in about 1/4 cup of chocolate chips. 
Place your dough on parchment paper on a cookie sheet. 
Flatten into a loaf about one inch high and 4x6 inches. Approximate.
 
Now take 1 egg yoke and 1 Tbs. of water and whisk and coat your loaf. Usually when baking you would use egg white. But most of the biscotti recipes I found called for egg yoke. So there ya go! Use egg yoke. I just don't know why.

Then Bake it at 375 degrees for 20-25 minutes of until firm.
Then pull of and let cool for at least 30 minutes.
Slice at a diagonal. Make each slice about 1/2 an inch thick. I made mine too think.
Trial and error.
The lay on the baking sheet and bake for 10 minutes on each side.

Now dip into your coffee and enjoy!

I give this recipe a 4 out of 5 stars. Cheap, easy, and yummy. But too rich for my taste. I only ate one with my coffee this morning and I am going to explode! And I think it would be better with melted chocolate on top, or drizzled, or dipped on one side. Something to give it a little more moisture. 
Here is your recipe!
Chocolate Chip Brownie Biscotti
Ingredients:
3 Tbs of butter
1/3 cup of sugar
1 egg
1/2 tsp. vanilla extract
.88 cup of flour
3 Tbs. cocoa powder
1 tsp. baking powder
1/4 cup chocolate chips
1 egg yolk
1 Tbs. water

Directions:
  1. Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
  2. Cream together your butter and sugar. Add the egg and vanilla. Mix.
  3. Add flour, cocoa powder, and baking soda.
  4. Add chocolate chips.
  5. Form into a ~ 1x6x4 loaf.
  6. Whisk egg yolk and water together and brush onto the loaf.
  7. Bake for 20-25 minutes or until firm.
  8. Cool for 30 minutes.
  9. Slice 1/2 inch slices diagonally. Bake for ten minutes on each side.
  10. Let cool and enjoy!

Free coffee creamer problems

The facebook server is not able to take the traffic they are getting. So it is now 35 minutes past time and I can not get through! But I really want to try some new flavors so I am hanging tough! Oh yea! Perseverance! Plus I just love their creamers! So It will probably be worth it! Anyway, I will give you an update when I have something!

5th cup of coffee! Cappuccino!


Here is everything you will need! Hot brewed coffee, skim milk (and vanilla if you don't have skim milk), chocolate syrup, simple syrup, and a cute penguin cup. Okay any coffee cup will do!

I mean come on! I know you want a penguin cup!
Okay! Only one last photo of the penguin cup.
Done! 
Measure out about 4 ounces of milk into your carafe and put the carafe in the fridge until ready to use. You want that milk extra cold!
Now brew your espresso as usual. 4 shots is good for this cup. More or less depending on what you like. While it is brewing add about 2 Tbs of simple syrup to the bottom of your cup. More or less depending on how you like it. Then pour in your coffee.
Now froth your milk. Add a drop of vanilla if you don't have skim milk. Pour your steamed milk into your espresso holding back the froth.
Scoop the froth on top of your coffee.
Carefully make two circles on top with your chocolate syrup. Some of the syrup might sink into the coffee instead of staying on top. That is okay. Just put a little more in that spot.
Take any small stick like thing you can find (I use a meat thermometer) and drag it from the middle of the cup to the side five times. Wiping off your utensil between each drag.
Then, between each of your previous drags, drag the chocolate from the edge of the cup into the middle. Wipe off between drags. You should do this five times as well. 
When you are done it should look like that! Bam! A yummy, fancy, professional looking cappuccino! 
Cappuccino

  • 4 shots brewed espresso
  • 4 ounces of skim milk (if you are not using skim milk you are going to want a drop of vanilla extract)
  • 2 Tbs. simple syrup
  • Chocolate syrup
  1. Measure you milk and pour into your carafe. Place your carafe into the fridge.
  2. Brew your espresso
  3. While the espresso is brewing pour your simple syrup into the bottom of your cup.
  4. Pour the brewed espresso into your cup.
  5. Steam your milk for 30-40 seconds.
  6. Pour the steamed milk into your cup holding back the froth.
  7. Scoop the froth onto the top of your coffee.
  8. Make two circles of chocolate on top of your foam.
  9. Drag your stick from the middle of the cup to the edge five times. (Wipe between drags)
  10. Drag your stick from the edge to the middle in between your last five drags. (wipe between drags)
  11. Enjoy you lovely coffee art! :)
